What Movement Actually Does

Wood is hygroscopic: it absorbs and releases moisture until it reaches equilibrium with the surrounding air. As it does, it changes size across the grain, and barely at all along it.
In a bathroom, the air goes from moderately dry to saturated during a shower and back again, every day. A cabinet made from a species that moves a lot will express that cycle: door frames rack slightly, panels press against their grooves, and finish lines at joints open and close until they crack.
Two mitigations matter more than species. A frame-and-panel construction lets the panel move freely inside a stable frame. And correct moisture content at machining means the wood is already near its service equilibrium, so the movement it does have is small. A stable species is the third layer of protection, not the first.

The Common Species Compared

These are the species most often specified for bathroom furniture, with the properties that matter in this application.

Two notes worth adding. Red oak and white oak are frequently sold interchangeably as "oak" and behave differently: red oak has open pores that wick moisture, white oak does not. And teak's reputation is earned but its price means it is usually reserved for visible components rather than whole cabinets.
The Factory Variable That Beats Species

A vanity in a stable species machined at the wrong moisture content will perform worse than one in a moderate species machined correctly. This is the single most important production variable in solid wood furniture and the one buyers almost never ask about.
Timber has to be dried to a moisture content close to what it will experience in service, and held there while it is machined and assembled. Wood machined too wet will shrink after assembly, opening joints. Wood machined too dry will swell, pressing panels against their grooves until something splits.
The complication for exporters is that service conditions differ by destination. Furniture destined for a heated North American interior in winter faces a much drier equilibrium than furniture staying in humid southern China. A factory that asks about your destination market before setting a moisture target is doing this properly.
