Natural Marble

Marble is chosen for one reason and it is a good one: nothing else looks like it. Veining is geological rather than printed, and each slab is genuinely unique.
Its behavior in a bathroom needs to be understood before it is chosen, not after. Marble is calcium carbonate, which reacts with acids. Toothpaste, cosmetics, citrus, and many bathroom cleaners will etch the polished surface, leaving dull marks that are chemical damage rather than dirt. Sealing reduces staining but does not prevent etching, because etching is a reaction rather than an absorption.
For an owner who accepts this and treats it as patina, marble is a wonderful bathroom material. For a hotel, where a guest will leave a bottle of something acidic on the top and the next guest will complain, it is a maintenance liability.

Engineered Quartz

Quartz is the practical default for many bathrooms and deserves to be. It is non-porous so it does not need sealing, it resists staining well, and it is hard enough that everyday use does not mark it.
Two limitations matter for bathroom work specifically. First, seams are visible. Quartz slabs are joined with adhesive and the joint line remains detectable, so a long run or a top around a basin will show its joints. Second, damage is not repairable: a chip in a quartz edge stays a chip, and heat damage from a curling iron or a hot appliance is permanent, because the resin binder scorches.
There is also a weight consideration. Quartz is heavy, and a long vanity top needs support designed for it and enough people to carry it up a staircase.

Solid Surface

Solid surface trades hardness for workability, and in a bathroom that trade is usually favorable.
Because it can be machined, thermoformed and chemically joined, two pieces can be bonded and sanded so the joint disappears completely. That is what allows a vanity top of any length, a coved upstand with no dirt-trapping corner, and above all a basin formed as part of the top with no joint at all. In a hotel bathroom the joint is what fails, and this construction has none.
Because the material is homogeneous through its thickness, damage is repairable. Scratches, stains, cigarette burns and light impact damage are abraded and polished back by maintenance staff with ordinary abrasive pads. Nothing else in this comparison can be recovered that way.
The tradeoff is real: it is softer than quartz and will scratch more readily, and it is not heat proof. Both of those are addressed by the same property that causes them, which is that the damage sands out.

Choosing by Who Maintains It

The useful question is not which material is best but who is responsible for it in five years.

One specification note applies to all three. Whatever the material, decide the tap hole count and spacing, the waste type and the upstand or splashback detail before fabrication. All three materials are machined before delivery and none of them can be usefully altered on site.
